New staple? Possibly

I made the stirfry again tonight. It's easy to make and by doubling the recipe, I don't have many random things left over and I get 2 nights worth of dinner. This time I actually got my act together to make the rice. Here is the picture from this rendition.



Seriously, I have no idea why this picture isn't oriented correctly. Something wacky is happening during the transfer. Anyway, I also made this chicken salad recipe for a luncheon tomorrow. I didn't eat more than a bite but holy cow it is super salty. We'll see how it goes over tomorrow.

Back from the Hiatus

Yikes I didn't realize it has almost been 2 months since the last post. I should make up for it some this week. I have an entire week worth of meals planned. Tonight I had a friend over for dinner. I was feeling a little adventurous and tried using coconut milk for the first time. Man do I know how to live on the wild side or what? Anyhoo, I made Coconut-Lime Chicken & Snow Peas Salad from Eating Well Serves Two

Here is the recipe:
1 cup "lite" coconut milk
1/4 cup lime juice
2 T brown sugar
1/2t salt
8 oz chicken tenders
4 cups shredded romaine lettuce
1 cup shredded red cabbage
1 cup sliced snow peas
3 T minced fresh cilantro
2 T minced red onion

Preheat oven to 400 degrees F
Whisk coconut milk, lime juice, brown suar and salt in a 8x8 baking dish.
Reserve 1/4 cup for the dressing.
Place chicken in the backing dish and cook approx. 20 min (or until done)
Mix the lettuce, cabbage, snow peas, cilantro, and onion. Toss with the dressing.
Divide "greens" between two dishes.
Once the chicken is done cut it into bite size pieces and place on top of the "greens".
Drizzle 1 tablespoon of the cooking liquid over each of the salads.
Makes 2 Servings - takes about 30-35 min.

Verdict: Nice flavor, easy to make, super crisp and crunchy. It makes two whopper size salads.

Food for thought- What do you do with 3/4 of a head of red cabbage? And, 1 cup of coconut milk? Any suggestions are welcomed in the comment section!
